My preference always goes out to working in the serious gaming industry. While contributing there, nice portfolio pieces will arise.
For a company, I had to re-create a common tram found in Amsterdam for the Unity Engine one to one. The limitations were that it had to have a very low poly count for Oculus Quest compatibility.
The textures were more like a colour palette to save on draw calls stored in a very tiny 32x32 file.
